Planning ahead for an eventual Engineer run on it and was thinking of Dominate as my bonus? A good choice?

Working my way through with a Sentinel now and I have to say I enjoy it. Can get  very aggressive when I choose to, but can also hang back if I feel the need to. I know it's supposed to be the easiest class for this, but, to be honest, Insanity doesn't seem to be terribly forgiving of any missteps regardless of class.

Finally, a tip of my hat to the Insanity Vanguards out there. I tried it and it was just an exercise in frustration for me. A little too CQC for my taste and it felt like every move I made was wrong (Admittedly it probaby was :) ) I just could never  seem to get to cover after the Charge before getting gunned down. Couldn't even make it to Mordin.

So the videos inspired me to try, but I just couldn't make it work. Awesome videos though. Really show off the class, especially Sinosleep (I think is the name) Makes it look effortless.

AI Hacking and Dominate are great for temporary stalling of an enemy advance. Those two skills are not going to win the game by any stretch, but they do have their time and place. Concentrate on taking down one of the enemy defenses, Hack/Dominate, target the next enemy and remove its defenses, Hack/Dominate the weaker of the two, target the next enemy and remove its defenses, Hack/Dominate the weaker of the three, etc etc. Against a single heavy hitter like Geth Hunters/Prime, YMIR Mechs, Krogan, etc you can lock them down for 5 seconds out of every 6 seconds while standing in their face shooting them. Squad members do have issues attacking Hacked/Dominated enemies.

I don't recommend going much beyond 1 or 2 points in either. The added duration is ok, but having to re-whittle down shields or barriers slows down the overall effectiveness and may actually make things significantly harder in Insanity.

If you're getting started on an Engineer, take a look at my guide. I've posted several builds in which I've experimented with, more soon to come. I've also set up a leveling guide of sorts for a couple of the builds, and I will be adding the one with AI Hacking and Dominate later on today.

In the mean time, I can summarize the playstyle a little for you.

As the above poster mentioned, Dominate and AI Hacking are great for stalling enemies. They work really well together, so I suggest focusing on that sort of build. Playing as a Tech Master (The build I am describing), you don't actually possess the same damage burst that you would have by specializing in overload and incinerate. However, you make up with it by your enhanced ability to manipulate and control the battlefield. Choosing between Area Dominate or Enhanced Dominate is entirely up to you. However, Area Dominate really benefits if you and your squad are able to strip away defenses on multiple opponents at a time. Meanwhile, Enhanced Dominate lengthens the duration and also increases their armor, making them a more worthy puppet.

There is obviously more to talk about, but I am running out of time. As I said, I wrote a guide relating to Engineers, which is in my signature if you wish to look. If you find that it easier to observe than read, Average Gatsby is working on an Engineer video guide as well.
