Think it would be cool and immerisive if when you land in hub cities like the Citadel you would see your crew on shore leave hanging out in the bars or just sitting around a bench or restaurant waiting for orders that the Normandy is getting ready to depart. You would also see crew members getting supplies and moving it into the ship as well as party members who arn't following you around doing similiar things as well.

I think that's a pretty damn good idea, actually. Would help the characters seem more alive, instead of just imagining them on the Normandy all the time.
Heh, I can just imagine Legion idly haggling with some Batarian merchant, and people giving him weird looks as they walk by.

Well obviously not everyone would go someones got to maintain the ship. Also only on safe hub cities so you won't see them in a place like Tuchanka and less so on Omega. This is of course more of a thing they should put for ME3 and whatever hub cities they are planning there.
