For me, it was a toss up between Orlais and Antiva because I like the idea of intrigue - assassins and bards ruling the nation (in practice) as opposed to a traditional monarchy. I ended up choosing Antiva because the French accents would start to grate on me after a while (not intended to be a racist comment).
I have to admit though, Tevinter probably has the most story potential.
Dev Question: Which country would you most like to visit in future Dragon Age games?

I want to visit most of the locations in Thedas but frankly since I've only really heard and seen the worst of Tevinter I'm interested in their the most. It being the first major player for humans in Thedas and all it be interesting to see what there world looks like and how much of the past of dragon age they have hidden in Tevinter.

The Tevinter Imperium, mainly because Constantinople/Istanbul is a hell of a city, and Minrathous logicaly would have to be as awesome.
If not for Tevinter however, Antiva would also be awesome just for the chance for visiting Arlathan.

The Tevinter imperium for sure, because of the Qunari War. Also, the fact that the Magisters will be ruling the cities makes it something different from what we've seen (no Chantry control).
