I have had a fantastic time playing ME/ME2 and DA and was wondering if anyone can throw some suggestions my way on other good rpg games out there that would be worth playing while I wait for new content.

Neverwinter Nights 2 (and especially Mask of the Betrayer) were also some of the best games I have ever played.

KotOR 1 and 2, Jade Empire, Mass Effect 1 all deliver MORE RPG goodness then ME2 does.
Stay away from Fallout 3 as thats just a basic shooter with almost no story.
Oblivion (I never played cause I hated Morrowind) im told has more story but its disjointed and random rather then telling a strong story so thats a maybe, depending on what you like.
I recently (with in last year) Played Lost Odysee. Very Linear game outta japan but very fun as well. Turn Based combat so stratigically it could get difficult and I had to redo many a encounter to figure out right tactics for right opponents. Maybe check that out if you looking for story over combat RPGs.

I am certainly looking for more rpg than combat rpg but as long as the story is good I don't mind to much.

Oblivion's a different kind of game than BW's RPG's. OB is a sandbox game where you can practically do whatever you want.
The game itself is nothing spectacular, but if you're bored you might want to give it a go.

I would definitely say don't write off Fallout 3 (I understand people have varying opinions) as I found it to be anything BUT a basic shooter. The customization is very rewarding and there is a ton of NPC interaction. Granted, the world is decidedly less flashy than Mass Effect, but interesting nonetheless.

To be honest with you, Bioware is the only company making this type of RPG. Your best bet is to go back and play the Baldur's Gate series (at the very least get the Tutu mod to allow the original to use the sequel's engine). It's an awesome epic the like of which hasn't been matched since.
If you're more into the story and NPCs then try Planescape Torment, considered by many to be the best RPG ever.
Bethesda are for those who like their open worlds, and Fallout 3 is a big improvement over Oblivion in making a world worth exploring I hear. NPCs are a little flat though.
The Gothic series and Risen are about picking your faction, which takes the place of your moral choice and class system. Choose who to side with and see how differently the game plays out. Considered a more hardcore RPG classic series (Risen being new and unrelated to Gothic in terms of story and world).

I'm going to have to dissagre with you there good sir / ma'am. Fallout 3 is a very good game if almost equal to ME 2 in many aspects. The combat is on par with ME 2 despite being a FPS. The gameplay still has some bumps like ME 2 . Overall the game is very good from Character customization, to the story ( It's no Heavy Rain, but there is some story, you just have to immerse yourself into the world.) Seriously though there is a reason Fallout 3 won GOTY. ( and Mass Effect didn't( I still think it should have though))
Last Point. If Fallout doesn't count go play a classic like The Legend of Zelda.( A Link to the Past, Ocarina of Time, or Majora's Mask( my recommendation))

People aren't mentioning it much but I loved NWN because:
- It had Hordes of the Underdark.
- It had tons of great modules you could play. Some of those module makers now work for Bioware (Yeah, I'm looking at you Rick Burton, I can't forgive you for not finishing that amazing paladin trilogy).
