Dragons were also considered extinct in the lore of Dragon Age, until they reappeared marking the start of the *dundundun*... Dragon Age.
If the Dragon Age franchise sticks around long enough, I think we will see griffons. Not in this expansion, and almost certainly not in any expansion for Origins. But in DA2 or an expansion for it? Or in a future installment after that? I think so.
I am less confident that they will be ridable, though. Maybe.

But Dragons add something to the story. Griffons don't. They're a cool factor, not something integral to the whole storyline. Like I said, if they can't be bothered with horses, there's no way they'd ever go to the trouble to add both the game mechanics and the story explanation just for some unrideable creatures. Adding an entire Z axis just to have rideable griffons is even more of a waste of resources.

Whaaaat? Griffons are embedded in lore of the Gray Wardens. They are the SYMBOL of the Gray Wardens, and were once what the Gray Wardens were known for best... they are part of the reason Gray Wardens were figures of legend.
I respectfully disagree that they don't add anything to the story. There's as much story value there as there is for dragons.
Edit: Just to make sure it's clear, I don't care about them flying or being ridable. I'm more interested in the story of it.

I don't know that I would actually want a gryphon, but saying it would never be possible because of Z-axis limitations or whatever isn't the entire truth. The biggest problem would be creating whole new models, if they decided not to use the small winged dragon ones for a base.
