So, which class should I go with for my next playthrough? Oh, and some other questions.

Well, I have currently beaten the game twice. The first it was as a paragon sentinel on standard dificulty, and I have to say, I had the impression I was unbeatable. I could pretty much use the shield boost, go rushing at the enemy with the submachine gun, let the enemy destroy my shield, unleashing the shockwave which would stun him and give him some damage, get it back up, run back to cover if things are too rough, and wait to recover the portion of my shield the enemy took away and for the cooldown period of the latest shield to pass, then repeat. I didn't need to worry about most bosses, too. I could get hit by their main attacks and get my shield back up, and by the time the enemy was ready to unleash another attack, I was already able to use it again. I chose the sniper rifle when I had the option to take advanced weapons training, and I was careful not to take any renegade option, and no one died. I also imported my ME1 paragon save data.

On my second playthrough, I played as a renegade infiltrator, and didn't take many paragon choices (yes, that pretty much means that there's probably not going to be much diference in ME3 between importing this save or starting with a standard character. Other than the team and crew members, who survived, every NPC that could die died, like that mordin's pupil, that Volus who thinks he is god, or that young guy who wanted to be a mercenary. Also, the collector base was spared). I played on hard dificulty, and I have to say, things were much harder. I couldn't just rely on my shields, and I had to take cover often. The bosses were actually a menace, too. Luckily, since I had already beaten the game once with my paragon character, I could get the geth shield boost in the beggining of the game. I took the widow sniper rifle when I had the choice, and since I wanted this to be a full renegade run, I didn't import any save data (I had only played through ME1 once).

And now I plan on playing through the game a third and final time on the hardest dificulty, but I have no idea which class I should choose. I considered engineer for triple drone fun, but a single drone doesn't seem that interesting to me, and it would take a while in the game for me to be able to use 2 or 3 drones. I'm not sure I would like having to rely on my powers as an adept, either. I have considered vanguard, but he also has no natural shield boost and has to get dangerously close for his full potential to appear, which is good when dealing with a single enemy but awful when dealing with entire squads. And of course, I haven't forgotten the soldier, but he doesn't have a whole lot going for him other than weapons. Can anyone help me choose?

Also, if I import ME2 data, will the imported save still exist or will the new one over ride the existing one?
Thanks in advance.

We can't really tell you what class you should play, that's a decision that has to be made based on what you enjoy doing most. Every single class is viable on Insanity, so it really boils down to whether you like Biotics, Tech, Combat, or a certain mixture of two of those.

Personally, I have had tons of fun playing a Vanguard on Insanity. It's not for everyone though, and there is a good chance that you will spend a lot of time reloading the game, especially early on. Still, with the right spec and strategy the Vanguard can get through any fight in style. Charging in and shotgunning anything in your path is incredibly exciting if done right. Lots of people are stuck with the notion that Vanguards are gimped on Insanity, but this has been proven false so I'd recommend it if you like an in-your-face high risk, high reward kind of play style.

As for the lack of a shield boost, who cares? Adepts don't have one and neither do Soldiers or Infiltrators. Besides that, Charge replenishes your shields when used, and on a short cooldown it is arguably more useful than Barrier/Fortification/Geth Shield in almost any situation.

For your second question, you can import either a ME1 or a ME2 character as many times as you want. It won't overwrite your old file, but any new characters you create will have the same name and that might get confusing when trying to find the right character to import into ME3. For example, every single character I've beaten the game with is named Chris Shepard. I had 3 VG's that had beaten the game but I deleted my first one because it was mediocre in comparison to the others.

Hope this helps a bit.
