Actually if you pay attention Bioware has made some careful choices in the backstory of the Mass Effect universe to address the issue of mixed-races.
Playing through Mass Effect 1 a couple years ago, I thought it interesting that several human characters' races were not immediately identifiable.
At the time I thought Anderson was probably semi-black but I wasn't sure (turns in the the Revelation novel he's revealed to be "predominantly African" but with "traces of Central European and Native American ancestry".)
Kaiden was another mysterious one. He looks mostly caucasian, but the jet black hair and eyes suggest that he may be part Asian as well. IIRC he was one of the kids who grew up in Singapore.
In the ME novels too it was been noted that most humans have had interracial marriages so pure blonds etc were becoming very rare (such as one of the main characters in the novel Ascension). Look around in the citadel in ME1 and you'll see that a lot of human models/designs who are amalgams of different races.
And there's Shepard who can be just about any race you want him to be. Probably the most important human in the Mass Effect universe, so how about that?
