Why?
I am not saying anything wrong with doing that since it is your game but I am just wondering why? The way I see it all you need is one save for ME3 or heck even just a speed run just before ME3 comes out. I have seen a good amount of people say they have done 7+ ME2 runs and never tried one ME2 romance so that they can stay true to their ME1 LI.
Tthe way I see it is we should try and experience as much of the game you can because some of the ME2 LIs are very interesting. For example I had Liara as a LI everytime in ME1 but once and I have a save ready for any DLC or ME3 but I have also been able to see the full story of some of the other LIs.
For the people that do more then one ME2 run but never cheat on your ME1 LI

As someone who considers their cannon romance to be ashely, I agree.
Although, I don't think too many people only romance their old LIs in every playthrough. So I'm not sure who you're talking to.

Even though Miranda is my #1 and canon romance, I still have multiple playthroughs with different romance scenarios.

Chad Shepard- Lost Willams on Virdmire, fell in love with Tali.
Bruce Shepard- Renegade, Stayed Faithful with Willams.
Rebecca- Paragon, hasn't chosen a LI yet.
So I have a healthy line up, I have a Mass Effect 2 romance, a Faithful Mass Effect 1 Romance, and a character open for anything that Mass Effect 3 throws at me.

My canon playthrough is a femshep romancing Kaidan. I never had any plans to ditch Kaidan for the ME2 LIs, but I did talk to them as much as I could without "sealing the deal", so to speak. None of them appealed to me nearly enough to want to romance them with a new femshep, so if I play a femshep again, she's either staying loyal to Kaidan or staying a celibate importShep. I have watched the romance footage on YouTube and was not intrigued. I think mostly I just like Kaidan too much as a character to not romance him - same deal with Alistair in DAO.
I'm finishing up a ME2 with a newly created maleshep romancing Tali, so I'll use him to see what the female LIs are about.

I have a Shepard that romanced Garrus. My xbox John couldn't wait to cheat on Liara with Tali and I am about run through another game with a PC John and romance Jack. No hearts broken this time. I will yell at Ashley though, last chance. But my other 2 female characters are goody two shoes and I feel bad when I "cheat". Better for her to be miserable and pine for Kaidan.

Because I only play as female characters and none of the romance interests in ME2 appeal to me at all. I'd be happy with friendship options, so I don't get stuck at a point with Garrus where I have to make sexual advances or never talk to him again, for instance, but I don't NEED to play out the romances in this game.
I also consider it a personal achievement to NOT get the paramour achievement, considering how the LIs are pushed on you.

None of the new romances appeal to me. I'll stay loyal to Liara.
I might be interested to trying out a Tali romance, but I'd have to start a new Shepard. But I can't, since I play paragon and the default Shep is a total renegade.
Oh, and I agree that not earning the paramour achievement in ME2 should be an achievement.

For me it was easy not to cheat the only squadmate I was intrested in was Samara. Even that I wanted more contact with Liara(Ashley on my soilder) then anything else. Really was not that hard to not cheat I talked to them enough to get upgrade and there fetch mission. Garrus just did not feel like the Garrus from the first one but if I must be honest I was indifferent to him there also. Tali feels more like a little sister to me more so after you find her father dead.
Again that is how I feel I am sure I am in the monority. Still was hopeing they had moved them forward what they did is no different then any other game with a romace option. You get togther and split after the game ends and that is just not a relationship to me.
