if you do Assault Sentinel - then Shotgun
if Caster Sentinel - then AR or SR (I would say AR as it is more versatile)

I thought shotgun was a nice choice, but then I played with an AR, and it's much much better.

You almost immortal. And I took Assault Armor.

Tempest, Carnifex and Vindicator covers all your bases. Ammo will become a problem for the other two but you have Warp and Throw to help at range. Tempest eats things at short range and effective at medium range so long as your bursting. And never seems to run out of ammo.

I went Tempest, Carnifex and Eviscerator. Good for a Guardian/Assault Armor Sentinel.

The SR is not the way to go. You don't want to be far from enemies sniping them because the sentinel has absolutely no damage bonuses or time slowdown. What the sentinel has is tech armor (which makes him a pretty good tank in mid to close range fighting).
I would say take the AR. The sentinel is never going to fight like a soldier, vanguard or infiltrator but the AR makes him into a decent fighter. The shotgun limits the enemies you can be effective against because of its short range. Without the vanguard's charge or the soldier's adrenaline rush, the shotgun really loses its luster.

Carnifex is a pretty good close range weapon, not better than a shotgun mind you, but it can fill the role.

I would roll with AR since you can rush in close with them, or stay far away and they are always good.

I personally don't like the feel of the ARs. The Vindicator is nice, but I just don't do well with or like the feel of the burst fire. I feel like the Tempest pretty much serves the role of the AR, and for me at least, feels more powerful. The ARs felt like a downgrade. I'm only talking about feeling, mind you.
In any case, I think it is better to take a weapon to fill a gap, rather than a redundant choice, so I think Shotgun or SR are easily the better options. For an Assault Sentinel, Shotgun is probably the way to go, I haven't played much that route. I play mostly the caster Sentinel, and I've been favoring Dominate lately. The SR is really the ideal weapon for this playstyle.
The Viper more than makes up for the lack of a time slowing effect by having the ammo and rapid fire ability to correct mistakes. I really found with a little practice I had very little trouble getting headshots anyway. But in any case, I don't use the SR to kill, I use it to assist in dropping defenses so a target can be dominated, or to assist my dominated target. The Viper is basically a handcannon that fires faster and has a scope. You'll use it in long range situations where you used to use the handcannon.
In my opinion, I think AR is actually the weakest choice for a Sentinel of any type. Pick Shotgun or SR based on whether you are playing Assault or Caster style.

I'm pretty partial to the Collector AR as a Caster Sentinel. It's very consistent (unlike the Avenger/Shuriken), can be fire full auto due to relatively low recoil (unlike the GPR/Tempest), and has a decent clip size (unlike Vindicator/Handcannon). Sure it does not excel in anything (RoF, DPS, accuracy, clip size, etc.), but it makes up for me sucking at shooting lol.
Those with better twitch skills will probably be better off with Vindicator (its pretty freaking insane when fired full auto at 284.9 base dps; only thing you have to worry about is ammo and your own accuracy skills), but I honestly suck at FPS games, so I go with the one I can spray and pray.
In any case, I wouldn't go with SRs. This is partly because I use Reave as my bonus power, but mostly because ammo CC powers don't work very well with SRs with their low RoF. And since I can afford shooting almost nonstop at medium ranges already, and even survive for prolonged periods of close encounters with non-boss enemies, might as well take the multiplier while I'm at it.
So yeah, I'd go Cain, Carniflex, Tempest, and Collector/Vindicator. Cain because its insane in burst damage, Carniflex because Predator just sucks, Tempest because it has less recoil/more accuracy/bigger clip size than Shuriken, and AR for the reasons mentioned above.
