If I delete a career in ME2, will it also delete the endgame save for that career?
If so, cool, that finishes my query. If not, how can I delete an endgame save on Xbox360?

Yes, it will delete the "endgame" save. Since you can keep playing after the end of the game, each individual save created after that point can be imported again.
It's not like Mass Effect where there were hidden saves that you couldn't remove by deleting a career.
