Just look like minor variations to me.
The one to the right of the first picture doesn't look like it could fight in any meaningful manner. Creepy, I'll grant that, but I completelty understand why that thing would not translate well into an end-game boss fight.
The other appearance, left side of first pic doesn't look like it'd be able to haul itself back up. Looks more like a true cross between a cuttlefish and a human, but again, fairly difficult to implement it in-game as an enemy that attacks a ground-person in a plausible fashion.
In short, I understand why Bioware took the direction that they did, even though I agree that the art work looks creepier.
If they wanted a 'boss' fight (which incidentally I don't care much for), they could have given it rudimentary movement, have it send an army of husks at you, make it break free of the supports, etc.

My actual expression... combination of WTF when I saw it and heard the reason for the harvesting of humans (since oddly enough, I like to play games before I get spoilered by forums) to going 'Ack' and 'Sniper shot to the eye!' ... funny how the bigger they are (Thresher maw / reaper hybrid) the easier sniper rifles take them out.

I attribute it in part to the lighting though; I understand that red is traditionally associated with evil, but I almost think having the room dark(similar to the altar in the Derelict Reaper) and maybe having the Embryo's eyes lit blue(same colors as husk eyes) would have helped the atmosphere of the fight a lot.

The giant embryo husk from the right side of picture one would have been absolutely awesome. Great opportunity for some serious mind-screw going on there. For instance, let's not forget how notorious the final boss fight from Mother 2 (Earthbound) was.
The final boss was acceptable, but like so many I was forcibly reminded of a giant, terminator-esque monster. I would have preferred to get something a bit more alien and horrific, but it worked in the context of the game. It's all pointlessdiscussion since the game is out already, but I think they missed an opportunity to really drive home what an abomination the Collector base really was.
