If I am playing an Engineer and want to have Garrus with me all the time, who would be a good third team mate?

Liara or perhaps Liara. If not Liara, then maybe Kaiden emphasizing biotics. Biotics are important. If you aren't playing on insanity though, it shouldn't be too difficult no matter who you go with.

I recommend Wrex, offers Biotics, Firepower, and Tankishness as well as every interaction between Garrus and Wrex being pure gold.

I'd recommend Wrex (for biotics, damage and all-purpose tanking) if you're splitting Garrus' talents between weapons/tech, or Liara if you're making Garrus completely weapons-based. As Karstedt said, biotics are extremely useful as 'crowd control', although they aren't as crucial to victory on lower difficulty settings.

Would Garrus, Wrex, and Sentinel be a better fit?

I actually did Garrus and Tali together, and it worked quite well (with the exception being Pinnacle Station) on Hardcore mode. Insanity would not have been as much fun with this crew though. If you are playing on Insanity difficult, I'd agree with the others and take Wrex. He's tough as nails and can dish out the hurt when it counts (plus his regeneration rate is excellent and he can wear heavy armor!)

My first playthrough was Garrus and Wrex on my engineer, and it was fine. Although I was playing on normal and had no idea what I was doing at first. But I've used either on various higher difficulties just fine. You should be okay. I'd recommend those two. Wrex is a beast.
