Does the blight progress as time goes by while you travel between areas or is it as you complete the main quests?

It doesn't really progress, though the dark stain gets bigger as you recruit allies.

I was wondering if anything else would get attacked by the Darkspawn after Lothering got destroyed while I was in Redcliffe.

Nope. That's the only one. But it makes sense - everyone you talk to is preparing to leave ebcause the horde is on its way. I guess the horde just chills out in the south for several months while you amble around Ferelden doing quests.
