i sort of did it backwards though, finished ME2 4 times before finding a copy of ME1 to play

You can talk to Ash as much as you want.

During one of the conversations you should have a choice of saying 'I'm not interested in you that way'. That will do it.

I think it's the conversation when you overhear her sister commenting on Shep being cute.
