First playthrough talk about a bad ending, it's either Allistair the whinner (who doesnt even want the trone) or that Anora we just met who seems to betray us every time she can, talk about a bad ending to that whole story.  Is there any other (hidden) choices or these 2 are the only choices available ?

There are a few other options. You can have them marry each other, or if you play a human noble, female characters can marry Alistair and become his queen, male characters can marry Anora and become her king. Another option is to put the ruler you think is best fit on the throne and become their chancellor (end game decision). You end up with quite a lot of power that way.

I take it you didn't "harden" Alistair during his family quest. He makes a much better king candidate if you do.

Having Anora marry a hardened Alistair gives a good result. HNM married to Anora is pretty good as well. Anora on her own isn't bad - unhardened Alistair on his own is pretty poor.

Unhardened Alistair plus PC Chancellor is supposed to be pretty alright, but I've never done it myself.

There are as many opinions about this as there are endings, but I would add that if Alistair is hardened the result is at least as good as when he rules alone as when he's married to Anora. In my opinion, better.

Does Alistair being hardened/unhardened make any difference to the epilogues if you're a female Human Noble and you marry Alistair to become Queen?

Hardened or not I think you get the same wedding card. The one where you travel together and the people are happy to see how Alistair adore his new bride. The card that changes is Alistair's ruling card, but that is not unique to the HNF ending. The only alternative wedding card I've seen is the one where you get married but are not in a romance.

Could you elaborate on the changes to the ruling card? So far I've only married unhardened Alistair to Anora. This time I want to marry Alistair myself, but I'm interested in whether his effectiveness as king is affected by hardening or not in this situation.

Hardened: In the months that followed his coronation, Alistair surprised many by studying the art of governance and doing his best to rule the kingdom with a fair and even hand. He proved quite popular with the people, his humor and easy grace winning them over as much as his willingness to sneak out of the castle and mingle in the lower-class taverns on occasion.
