To add some redemption to this thread, I just made this recipe (scaled down). Tarragon is something I've never really used before, but the chicken was very yummy over rice.

Edit: @mousestalker, that looks GOOD!  I wonder how it would be with pork substituted for chicken . . .  Hmmm, that may be tonight's dinner!

Oh, I make something very similar, but add a little diced fennel which I brown a bit in butter.  It is gorgeous.

Fennel sounds like a great addition. We're having company over later in the week and I was thinking of serving it. A bit of fennel would be very tasty.

Pork should work. I pounded the chicken quite a lot, so it was very tender. But a tender piece of pork should work as well.

That looks delicious! I don't have a lot of time to cook, but I did try these meatballs the other day and they were very good. But don't pan fry them, just bake them in the oven for 10 minutes. They're a little less fattening that way. And you can freeze the leftovers.
