Oh, I make something very similar, but add a little diced fennel which I brown a bit in butter. It is gorgeous.mousestalker wrote...
To add some redemption to this thread, I just made this recipe (scaled down). Tarragon is something I've never really used before, but the chicken was very yummy over rice.

Fennel sounds like a great addition. We're having company over later in the week and I was thinking of serving it. A bit of fennel would be very tasty.

Pork should work. I pounded the chicken quite a lot, so it was very tender. But a tender piece of pork should work as well.
