Subject says it all...
Is there a maximum level you can put your Magic/Str/Dex/Wil/Con, etc., etc. at? Or, can you just throw everything into one attribute if you so desire?

Nope.
I just read guides that said to put a stat to 'max' and I wondered what that was. Now I can assume by 'max' they mean every other point you can spare that's not commited to something else.

I thought the max for any attribute was 50, but actually I think it's 99.
I think without a mod (99 attrib. tomes) or edit of your savegame via Toolset, you'll never get there. (BTW, you cannot increase attributes through the developer/cheat console. Unless you download a mod that lets you give yourself attribute points through the console. Then you can.)
You get 3 attribute points per level. If you were pumping one & only one attribute the entire game, you would wind up at somewhere around 91. (16 + 3 x 25).
BTW: never increased any attribute much past 42. If you want your chars. to be able to use any item in the game (at least any item relating to their main stat), that seems to be the threshold. Once I got to 42 I often started working on secondary attributes.

If you're duping stat books, the limit is technically 1000. If you look at your character's stats in the menu, the max it will show is 999, but if you click on it for more information, it will show numbers above 1000. No idea if there's a limit to that back-end number or not.

Mages do best with all points into magic. Some warriors, strength. Honestly Wicked your rogue with 70 cunning probably can't hit the broad side of a barn. But when you do, you hit hard.
I know I've taken a stat above 100 by using the console (I was testing a mod) and it appeared to work. There may be a point at which the number displays but you cease to gain more benefit, but it would likely be very, very high.

if yo use the toolset to modify your Pc, i think the max is ∞, so if you have a computer dont worry about that

This is an old topic, but I think you can clear over 100 without mods or gear, if you spend every point imaginable on 1 stat (including specializations and tomes). I.E. A rogue assassin/duelist with every point in dex (not that I am advising to do this) will have 113 dex. 15 base + 4 fade + 4 specializations + 77 leveling + 13 from tomes (it appears every tome also gives an attribute point + collectors edition). This is all assuming you go to level 25 (which might not be possible without an exploit, and you have the colectors edition) but you still should be able to come really close to 100 without and special equipment.
I am not suggesting to spend every point in one category but I am wondering what people commonly consider the max, If you are "maxing out" say strength how far do you take it? 40, 50, 60. I myself have always stopped at 50 or 60 (for my MAX). Just wondering if anyone else has a rule of thumb they use out there. So not so much what can I make the game give me with a mod, but what people think is a reasonable place to stop. Are you guys really building your chars out to have 80-90 in an attribute?

Far interesting is the question whats the minimum. Will you die if any stat reaches zero. Or it could swap to MAX (both was possible in BG2)
