They're very small rail guns that shave extremely small peices off of an ammunition block, hence the effectively unlimited ammunition.

I didn't mind the idea of ammo initially but the more I play the game the more it bothers me, to be honest.

Not what you're reloading. While guns still have unlimited ammo, they've switched from cooling via wenting to cooling through the use of replacable heatsinks, or "thermal clips". Why did they do this in terms of lore? Simple.
People were getting shot in the face waiting for a waiting for a weapon to cool. The Geth, who were using such a technology, were not getting shot in the face (flashight?) waiting for a weapon to cool;. Heat sink based weapons proved to be vastly more effective, causing others to become obsolete and non-distributed.
In game design terms, certain combinatoins were permitting people to trivialze the challenge of the game, and all people would do is pick a favorite weapon and use that. This did not create the feel they wanted combat to have. Clips are by far a better mechanic, because of this

Yes, it is a better mechanic.
A useless mechanic at that. Personally, I didn't feel any difference at all. Be it the thermal clips or thermal vents... never cared for it; felt the same. The only problem is... you run out of thermal clips and there is no option to vent it instead. Immediately puts it into ammo category.
Also, having to rush around the place to find clips... now that sucks.
It's much like an unnecessary filler. Just like the planet scanning. A waste of developer time. End result is just plain null. They discovered oxygen.

Switch between weapons to suit individual situations.
Seriously, unless your finger never stops pressing the shoot button, there's no reason to run completely out of ammo.

Yes. Having to scrounge for somehting because you wasted your resources does suck. The issue, however, is with wasting your resources, whether that be clips or healing potions. Ctting this out trivializes things - and waiting 30 seconds for a shotgun cooldown is very different from the split second reload in this game - especially if enemies are barreling in on you.

I dont see how having to use cover is mindless? in ME1 you could just pop your shield go in and kill everything w/o even needing to use cover at all. Anyway lets just agree to disagree. This style of play suit some player more than other. To each their own.

And finding clips isn't that hard, they are all over the place. You don't really need to look for them.
And for soldiers carrying more than 60 rounds in combat, yeah no. Normal soldier carries 2-5 clips of ammo at any given time, his platoon will have more. So Shepard carrying about 20 something thermal clips (maybe 500 shots in all together) isn't unrealistic at all.
