I tend to give dog 2 str 1 dex every level. He's a mage killing machine and a terrific crowd controller.

I won't recommend a party for you. Too many variables involved and it really depends on your preference and what you plan to accomplish

I usually go the constitution path for Dog, with some strengh and a small bit of dex.
When I was playing as a 2H I brought along Alistair, Wynee and Leliana, depending on your skills (herbalism and what not) you may not need a healer and might be able to make do on pots and bring Dog along instead of a mage, you could probably also do with out the rogue, but expirement until you find what feels right for you, it should only take a few stops to work out what works and what doesn't.

I did the Dex route for a few playthroughs after getting frustrated by how squishy he is, but my last one I went pure Strength. He needs a lot more babysitting, but I'd say it's better for the simple reason that Overwhelm becomes a death sentence to any whitename enemy and most yellow name mages.
The only thing I'd say is a must-have in terms of the dog's partymates is a mage with Telekinetic weapons - the most armour penetration you'll get out of his collars is 2, so his damage output against armoured foes is miserable without it.
