I think OP needs to lay of the steroids and get real. Deflecting bullets with a knife? Come on! One of my best friends pretty much kicks ass in every exotic fighting-style/sport you can think of and he says it's impossible.

Dude, get real, not a single person as ever deflected a bullet with a sword at will. Next thing youre gonna say that you can deflect the bullet from my grandpa's rifle. That's when I'm going to laugh real hard because that's physically impossible. The .50caliber bullet will break any blade.
So in theory, you can only "deflect" a bullet from a handgun, and only if you "cut" the bullet (so it has to be a frontal hit between the bullet and the cutting-side of the sword).
However, not a single human being can act fast enough to get into the right position at the right timing to deflect a bullet when it's shot at the target. Maybe if we're both standing still, there would be no wind and I would tell you when and where I'm going to shoot at you, only THEN you would have a small chance of deflecting the bullet. But in a real battle between you and me, with me carrying a gun and you only a sword? Not a chance, you're going to get killed if you would try.
No, you get real. You live your life with your pre-conceived notions that what seems beyond our ability is beyond possible. With the proper skills and dedication virtually anything is possible and the biggest roadblock the likes of you faces is your own lack of faith and resolve.
A true master of the blade can deflect the bullets even from a fully automatic weapon if he knows proper blade positioning and angling to ensure that both the bullet's path is deflected and that the bullet doesn't deflect back on him.
A true master can even deflect bullets back at his enemy proving that the sword is indeed superior to the blade in the hands of a master. That is why I always carry around my sword and never use a gun.
If you were to face me with a gun you would never have the chance to draw it before I cut you to ribbons. I've mastered how to be aware of my surroundings and even the most subtle of actions will be noticed.
My speed and agility would catch you off guard and my blade would taste your blood.
Maybe you should watch some Mythbusters. They already dismissed your claims. It's physically IMPOSSIBLE to deflect a bullet with a blade, unless it's only a handgun that's shooting the bullet, in a wind-free location, and you HAVE to hit the bullet with the cutting-side of the blade, else it will simply penetrade the steel of your blade and kill you anyway.
And even IF you deflect the bullet, it will shatter and the pieces will still fly at you at high speed. If you LUCKY, you'll only get minor wounds, but most likely you'll have shattered pieces of steel everywhere in your body.
You think you're the master of blades, then I'm the master of physics. I tell you, it's physically impossible.
PS: You think your speed and agility can outmatch the speed of a 860 FEET PER SECOND flying bullet?
