So I am finding the basic Out door (even indoor) maps of the "set" size is takeing me any where from 1-3 days of solid 2 -6 hour work per day (depending on the day - me = college student) so i am wondering how much detail you guys put into your maps and how long it takes you to do a map for any given part of your "game" or mod.

That's about what I have been averaging. Also, I'm not adding *all* placeables/props at the moment, just enough to make things look nice. I plan on coming back during the polish phase of development, or even better, getting someone else to do it (someone who is better than me at it, that is!).

For me, indoor areas are easier to do than outdoors since I have to fiddle a lot with the terrain to get outdoors to appear correctly and my sense of scale on the outdoor areas is totally off. An outdoor area (without much polishing, just the bare stuff) takes me 2-3 days of 4-6 hours while an indoor area takes around 1-2 days [the indoor is usually much more polished than the outdoor, naturally]. I am not even figuring in lighting as that is a whole different beast to get working correctly.
