I got ME1 when it first came out and finished it without knowing much about the game etc. Since there's a sequel I'm wanting to play through it again and I've read more about it etc. this time I guess. Anyway, I hear you can continue to advance your character from replays. My question is, does the difficulty level increase if you replay with a character that already finished? This game was a breeze for me even the first time through. Being mid level fighting low levels would be a snooze fest. I know you can alter the difficulty settings, but that won't be enough unless there's some sort of level scaling no?
How bout ME2? If you have multiple playthrus, which choices are imported? You get to select which playthrough to import?
How about difficulty of ME2? If you get to level 60 in ME1, and import is ME2 going to be way easy?

Oh, one more thing I need help with. Pre service confusion. I mean history. Do you advise picking two backgrounds that give bonus to the same morality gauge of par or ren? Mix it up, or be nuetral? I figure it's possible to max out both intimidate and charm, AND reap the discount and selling bonus, correct?

Oh, and is achievements just fluff in this game, like it seems to be in DAO? I really rather play not worrying bout such ego crap, that only I would probably notice anyway lol. But if there's practical reasons, or it influences ME2 in certain ways, I might consider it.

Hardcore is much more difficult then normal, but I'd recommend creating a new character for that, though. I hear that in ME2, Insanity lets the enemies level up with you, but I am not sure about insanity in ME1 (never got there).
Importing your character in ME2 only gives you a few small bonusses. Your character is reset to level 1 because the gameplay and levelling systems are so different. Achievements do not matter.
There is only a small bonus to the preservice history and you get it right to the start. It matters only very little.
It is NOT possible to max out both paragon and renagade, although perhaps those conversation options can be maxed out (to twelve). But really, once you are able to do that, you have that much money that it doesn't matter anymore

Firstly, you can max out both Paragon and Renegade. I have done it numerous times. It's easy for me because I known where every single Paragon and Renegade point trigger is. It does take a little effort though as you can't just cruise through the game and skip doing stuff if you intend to max both. The bonus morality points from you background are not significant enough to make much differance.
Most achievements in ME1 give a bonus of some sort. From unlocking bonus powers (you can choose with new characters) to passive bonuses on cooldowns and defenses. If you are going to play on insanity, they can be very helpful. Otherwise, the game is generally easy enough that it doesn't matter.
Replaying a character in ME1 start you at whatever level you previously ended at, and generally makes things that much easier. Even though enemies do scale and even increase in numbers at higher levels, it doesn't match the extreme power of a high level character.
Importing a level 60 character to ME2 starts you out at level 5 and is currently the only way to max out your ME2 level on your FIRST playthrough. You get a %25 xp bonus for new games after you reach the level 30 cap in ME2, so you can start at level 1 and still max out in later games. I would not say that starting at level 5 has a significant impact on the difficulty of ME2. You also get bonus resources and credits from an import (depending on certain things), that don't have any effect on difficulty, but will save you some of the hassle that is planet scanning. And since there are not enough credit in ME2 to buy everything, the bonus credits are very nice to have as well.
If you have the PC version of ME1, I would suggest using the console to "GiveXP" to get yourself to level 60 before finishing the game. I for one, don't like being made to play twice just to hit the level cap. If you don't have the PC version, I suggest you smash it to bits along with your non-PC system, post pics of the carnage, and then go get the PC version.
