I have no idea where to post this, but does anybody know why in kotor the lightsaber keeps on missing the target? I just downloaded the game from steam a days ago and have no idea how to improve accuracy.
Kotor...?

Dexterity? I think some abilities reduce accuracy as well. It's been a while since I played.

It depends on your attack bonus. The three starting classes and three jedi classes differ on this as well. Soldiers and guardians get a +1 increase every level, for instance, so they have the easiest time landing hits. The easiest way to improve your chances is to take the Weapon Focus: Lightsaber feat. If you're using one lightsaber, then grab all three feats in Dueling for a +3 attack bonus. If you're using two sabers, or a saber staff, then grab the three dual wielding feats fast, because you won't hit anything otherwise.
I realize the above was hurried and probably not too informative. It's tricky to figure out at first if you're new to D20 rules. This page might help: Link. Skip straight to character building section.
I also suggest checking out GameFAQs if you want to find in-depth analysis. If you decide not to, then just keep in mind the general idea is raising either dexterity or strength as high as possible for a Jedi that isn't focused on Force powers. Strength affects both your chance to hit and damage. Dexterity affects chance to hit and defense. I prefer focusing on the latter, but some swear by the former. Past that, it's all feats and equipment. As Jonp382 guessed, certain combat abilities decrease your chances to hit when they're active, but if you build right that isn't too huge an issue.

Dexterity only improves your chance to hit with a lightsaber if you have Weapon Finesse. Otherwise its strength.

There is no finesse feat in KotOR. That feat only exists in KotOR2. The first game grants finesse for free if your character's dexterity is higher than their strength.

Kind of an odd thing for a game to do with the DnD style. Don't dislike it, but still odd.
Didn't know that though, obviously, so my bad. I've played KoTOR 2 more recently (and more often even though I think the first is the better game) and thats where I remember the feat from.

I thought it was weird myself first time I played it way back when. It was appreciated though. Unlike NWN, there are a tons of good feats I can't take in that game without playing a soldier/guardian. Not needing finesse was sweet.

Well from what I remember (it has been a couple years) you need to specifically go for the combat style to be REALLY effective. If high dex (or str for the feat that uses your str modifier to hit) and things like dueling or if you dual wield/double blad lightsaber get max out the dual wield feet.
