In the opening Warden Ritual, do the choices I make in who is conscripted and who may attempt to join affect the fate of other NPC's in that opening? Or has their fate already been determined? For example, if I tell Oghren to take a flying leap, does this give other NPC's, who otherwise die, the possibility to survive the Joining? Or are they just "dead men/women walking"?

No, it is already pre-determined who will live and who will die. The only way to have any control is to just not conscript them at all (though you can't even do that with all the companions).

Here's what I don't get: Varel (the seneschal) recites the Warden's Oath and participates in the joining ritual, handing the cup to the recruits. At first I thought he was a Warden himself, but a short time later your learn he's a local and apparently not a Grey Warden after all.
So much for the secrecy of the joining ritual and the wardens, eh? Little plot hole, there. Big plot hole is how Oghren has a kid only six months after the Blight ends. Do dwarves have a stunted gestational period as well?
