Every tutorial I've looked at online it's been a different version of blender and the commands and hotkeys are different. It's leading me no where. But here's my update to show my progress. any suggestions would be helpfull.

sry, posted the wrong pic. when I go to my UV map when I unrwrap part of the object it looks like a 3d puzzle piece that can only be moved in 2d.

You want some kind of UV projection. UV mapping is 2d ^^ And with a projection the puzzle should be easier. For example planar projection from the side of the sword should make for a good uv map.

Search google for "uv mapping blender" .

PS: During the tutorial it says to save your texture in DDS format. I textured my model with a JPG in Blender. After I save it as DDS via photoshop plug in, do I import the DDS into blender and set it as the textures on that one before I export my model as an FBX? or can I just keep the JPG as the active texture image?

If you want to use custom textures you don't really need to load those textures into your 3d modeling software. Yuo have to properly modify the .mao (material file) associated with the model that will receive your textures.

Toolset wiki article on .MAO files.
