The beginning of ME3 should start with a short episode of Shepards past. You play a small mission with young Shepard, as follows:
1. Earthborn Shepard: Shep and his slum-gang of friends on Earth getting into trouble, things go wrong, big drama. (I know, I haven't put much thought into it, cut me some slack)...
2. Colonist Shepard: Mindoir, colony attacked, Shep does some heroic stuff to save somebody, his family dies, big drama.
3. Spacer Shepard: Shep stationed somewhere, station attacked, Shep has to do some heroic stuff to survive, lots of soldiers die, big drama.
So it's like 3 different possible intros, but each would provide background material as to why Shepard decided to join the Alliance and become the ultimate hero..... ?

Shepard yells "Damn you, Joker!" rushes into the Mako and leaves the romance option behind in a vain attempt to chase the superior Hammerhead, jumps off the cliff and gets stuck upside down before a Thresher Maw spawns beneath him and kills him.. again.
You wake up from the dead (again) to Miranda saying "This is why we got rid of the Mako, commander."

<As Dr Chakwas turns around, we see an slimy insect like creature clinging onto her back, with 3 tentacles inserted into her neck>
Shepard: EDI, i need a lockdown on all decks now! Authorization alpha three three niner, voice ID Shepard!
EDI: I am sorry Shepard, that is not possible <insect sounds>
Joker: Captain you need to rest. Its for your own good. <insect sounds>
<As Joker, Kelly, Chakwas approach Shepard, we see the logo Mass Effect 3, followed by some insect sounds>

still tho Soverign almost took out the whole Citadel fleet by itself... how the heck is Shepard gonna destroy the whole reaper fleet unless Soverign was a more advanced reaper

I like this idea, if they do this they might as well do flashback missions involving the "Service History" options.
1. War Hero: Shepard heroically kicking wholesale Batarian ass.
2. Soul Survivor: Shepard royally getting his wholesale ass kicked.
3. Ruthless: Shepard carelessly getting everyone else's wholesale ass kicked.

Suddenly several members of the gang turn start shooting and using biotics against their own. The team run for cover.
Leader: TRAITORS! KILL THEM! KILL THEM ALL!
and so the epic shoot out cinematic begins! Depending who lives in the last game each character gets their own few seconds to show off their skills in the cinematic. By this point the characters do the typical mass effect thing and have taken off their helmets so you can see their faces.
Garrus does some wonderful slo mo headshots from a distance
Grunt is laughing and plowing through the gang members " I AM KROGAN"
Thane is getting people in the shadows, snapping necks and shooting them in the back.
You get the idea , After all the characters get their moments of glory the leader makes a break for it , the crew members tell shepard to go after him while they take care of remaining gang members. That's when the real time gameplay begins. You have to go after the leader , it could be a tutorial or like the normandy scene from ME2.

However, I could honestly care less about facial reconstruction/stats carrying over - it may have worked for ME:2, but I will be pissed if Shepard receives another miracle resurrection. Why not just let us alter our appearance at the beginning and assume we looked like that for the entire trilogy? no need to go to drastic lengths to explain cosmetic changes.

I like this idea too, got a little vibe from the opening of "Return of the Jedi" but considering that I achieved flawless victory in ME2, my opening would be epic.

Only rather than Thessia, make it Earth. Bioware said we'd see it at some point, so let us land on Earth in humankinds absolute darkest hour. End the trilology with the Reapers defeated, but with humanity on the razors edge of extinction as the price of victory.
Lets have some battles that make even Krogan stand in silence, Turians hang their heads in shame, and a legacy that everyone remembers**
No grand parades, no heroic instrumentals. Just what few of Shep's friends survive (Shep not included), a tiny fraction of hope left, and a bloody, brutally hard fought, bittersweet ending.
