Does gear that affects stamina have any effect on mana when worn by a mage?

no, stamina regen is for stamina, and mana is for mana

Incorrect. They work for both.

There's one piece of equipment I found that has bonuses to both mana and stamina regen, I can't remember what ti was called, though I think it was jewlery. How would that work on a Mage? just apply one? or both?

Mages don't have stamina so it's either/or, not both.
