Well, two things here - how are you definine "attracted from the start"? I don't think anyone's saying Tali fell head over heels in love with Shepard from the moment he rescued her in ME - Love doesn't work that way. You yourself said it - attracted to Shepard as she came to know him during the course of ME1, which is generally what people mean when they talk about Tali being attractted to Shepard from the start.
And...
"What could I possibly be suggesting? I mean, a young woman gets rescued by a dashing commander who lets her join his crew and then goes off to save the galaxy? How could she possibly develop any kind of interest in him?"
The interest on Tali's part most definitely started in Mass Effect 1. She didn't show it, it may not have been in the game, but that line very strongly implies that Tali had feelings for Shep in ME1, even if she never acted on them.
Oh wow.. don't know when this got out of hand, but what I was trying to illustrate was how selfless and caring Tali is since all she wants is the best for Shepard. One of those points of being "selfless and caring", was NOT hitting on you in ME1, and accidently stumbling on the subject in ME2 (talking about sharing suits environments is a thing of trust and how she wasn't meant to imply that it was a thing between lovers), because she knows how hard it would be for Shepard to be tormented at not touching/holding/kissing if they were together.
She only jumps at the idea at "wow, I can actually be opening interested in Shepard" when Shepard says 'I care too" - or asks if she's flirting.
Also a note: Tali's the only ME2 character (as far as I can remember) that you have a good hint that she's a LI before the loyalty quests (Kelly tells you that her body language hints at something more).
So, to sum up - yeah Tali = loyal, caring, sensitive, selfless, because of the delay in romance between ME1 and 2, and because friends are the best people to romance.
Btw. Liara was my close 2nd choice because of her dedication in Redemption. If she hadn't gotten possessed by the Shadowbroker hunt and went with Shep, she might of been 1st.

I stick with Ash as my LI. Ash I find is a lot easier to listen to reason than Jack, and less of the **** everyone else it all about me attitude. Another reason I like Ash is that it is highly unlikely that she would ever really turn Shepard in, even if she disagrees with your actions like on Horizon. Miranda is just in the game to flaunt assets, I would of left her on the first world possible and never looked back.
I have no problem with Liara or Tali as a LI if cloud not get Williams.I see both of them as the shy quite types, I don't have a problem with it. At times its just like spill it out already. If I had to choose I say give me a Kobayashi Maru or Virmire Mission with those two and I will choose one that best suits my needs for the remainder of the game. Its just too close for me to call on that one.
Now Jack only time I'd ever go with her would be as Renegade Shepard. She is almost as ruthless as Shepard or just barely on par. I'd still go with the Paragon romance with Jack a quick **** just does not cut it for Shepard. Ah going Pirate, just being able to see her rip someone apart if they do not agree with me, that's how it is done.

Kaiden now is a deep emotional man (although he hides it somewhat well on the surface.) He always seems to be concerned with Shepard's well being. Kaiden's troubling past is one of the things I liked about him (I chose Earthborn Shep) knows how hard life can be. His ability to keep positive and level head was another good turn on. He would mostly likely still be the one I would choose in ME2 or 3.
As noted above I cannot at the current time give a positive review on Garrus, Thane, or Jacob due to finishing the ME1 import.

I would actually say that once you consider the recruitment missions, Kelly's reaction, etc. that BW "WANTS" you to think exactly this [that Tali's had feelings for a while] .... If you don't want to believe what [IMHO] BW wants you to think then good for you ... it is your game and RP afterall

Because she's a total nutter, too.
She has a incredible hard badass-shell, but on the inside she's vulnerable and soft.
My male paragon shepards, that are not crazy enough to catapult themself right in the middle of the enemy lines love Tali, because she's polite beautiful (well, at least the parts we can see) is loyal and has a major crush on shepard. Additionally she's always the "damsel in distress" longing to be rescued, loved and guarded. My paragons dig that. A lot. Ah, and she's a virgin... but thats a minus in my books actually.
My Renegade Shepard chose Miranda. because she's got ... a beautiful bra. And an immense butt....
My female paragon Shepard chose Garrus. Because he's cool as **** except when it comes to love things. Then he's incredibly insecure and needs to be taught how it's done. She likes to be the teacher.

I enjoy her pleasant demeanor. I love the fact that when I ask to speak with her she tells me “I always have time to speak with you commander”. She is shown to be considerate in her offer to feed your fish. She is respectful when speaking about the other crew members.
Kelly isn’t as voluptuous as many of the other team members, but she won me over with her charm.

And she's flawed and strong and bull-headed and honest. Quick to defend her friends, always ready for the fight and damned good with an assault rifle. It just felt natural to me. I feel like Shepard and Ashley just "get" each other. It's a good fit. But I also love that Ash isn't for everyone. She's a specific taste. She rubs some people the wrong way while others love her immediately. I am the latter.
I'll probably do a new femshep and focus on Thane. I dig him too. But I'll stick with Ash for my dudeshep. The other gals don't really do it for me.

Tali - Tali's romance is well writen (much better than any ME1 romance), but she feels like your little cousin that has a crush on you. Plus I don't like nerdy girls that might look like a zombie behind the mask
Liara - IMO ME1's squad mates were the most boring characters BioWare has ever made. She's pretty, but that's it. I only romanced her 'cos it fits more with Redemption

I second this for Kaidan.
But I have three Sheps and three different love interest for each one.
Kaidan (who goes with my main Spacer/SoleSurvivor/engineer Shep for the reasons quoted above).
Garrus for my colonist/ruthless/adept Shep. I like the parallels that can be created between the two with Shep's history on Torfan and Garrus' ending down the same path she had... and regretted for so long. And Garrus is just, well, Garrus I can't really explain it better than that other than to say that Garrus is an adorable dork. And he wants his and Shep relationship to work, more than anything. Which is really sweet.
And Thane for my poor Earthborn/WarHero/Soldier Shep, nothing ever goes right for her. Sure she saved the colony on Elysium, but her vacation was ruined.* Then she finally finds love only to have him be dying. Thane has a lot of Kaidan like qualities that I adore, plus he has a sexy mouth.
*During the mission in ME1 I always wanted to yell that at Elanos Haliat, instead of saying "You were behind the attack on Elysium!" I wanted to say "You were the bastard that ruined my vacation!"

Like you said, Ash isn't for everyone - What's interesting about your statement is that it only applies, of course, to some Sheps. Your ManShep and Ash seemed like they hit it off pretty well, there's a connection there.
I have two ManSheps who've both romanced Ashley. One of them left her to die, the other one's currently cheating on her with Miranda. *cough*. I'm just about to start a 3rd that will remain faithful.
I definitely prefer her romance to Liara's, but I think they all have their good points. Like real-life personalities, there is no such thing as being the perfect person.
Everyone's different, and everyone is looking for something different in their potential mate. As video game writers, BioWare only get to offer us 3 (and then later 6 more) possibly romanceable personalities in the game. So, to a greater or lesser degree, the writers have to hit a more than a few common denominators with them, to maximize their attractiveness across the widest range of players.
